Hello Tom, here are the Kale recipes that I told you about. My 3-year old really loves the Kale with soy-garlic-olive oil sauce! Also, see below for the double-chocolate zucchini cake.
These recipes are from "One United Harvest - Creative Recipes from America's Community Supported Farms" - Collected by Julie Sochacki.
Kale with Soy-Garlic-Olive Oil Sauce
5 C torn kale
1-2 garlic cloves, minced
1 T. soy sauce
1 1/2 t. olive oil
black pepper, to taste
Steam kale for 15 to 20 minutes. Meanwhile, whisk together garlic, soy sauce, olive oil, and pepper. Drizzle dressing over greens while they're still warm. **Note - regular garlic was a little to hot for my 3-year old, so I sautéed diced garlic scapes in the olive oil instead ... very yummy! Also, when I ran out of scapes, I just roasted the garlic first to make it milder.
Kale Crumble
1 bunch of kale leaves, stems removed but leaves kept whole
2 T. vegetable (or olive) oil
salt, to taste
freshly grated Parmesan cheese, to taste
Brush the kale leaves lightly with oil then sprinkle with salt and Parmesan. Put the leaves on a cookie tray and bake in the oven. Bake at about 350 until the leaves are as crispy as potato chips, about 10 minutes (watch that they don't burn!). They can be a salty snack, eat on the side with your meal, or crumble over rice, soup, salad or any dish where you want something crispy and salty.
Double-Chocolate Zucchini Cake
2 1/2 c flour
1/2 c Cocoa
1 t. baking soda
1/2 t. salt
1/2 c butter
1 1/2 c sugar
1/2 c oil
2 eggs, beaten
1 t. vanilla
1/2 c milk
2 c grated zucchini
6 oz chocolate chips
Combine flour, cocoa, soda, and salt. Cream butter and sugar, beat in oil, eggs, and vanilla. Add the milk while alternating with dry ingredients to the butter mixture. Mix in the zucchini. Pour into greased 9x13 baking pan and sprinkle chips over top. Bake at 350 degrees for 30 to 40 minutes.
And, here's one from Tom's mom, Elaine Kumpf, of Alden, NY:
Mom's Zuchinni Bread
Dry Ingredients
3 1/2 Cups Flour
1 1/2 tsp Baking Soda
1 1/2 tsp Salt
1 tsp Cinnamon
3 tsp Baking Powder
2 Cups Sugar
-mix together in separate bowl
Wet ingredients
3 eggs, beaten
1 cup Oil
1 tsp vanilla
2 cups Grated (course) Zuchinni
-stir into dry ingredients, then fold in
1 Cup Walnuts (or nut of your choice--I like hulled sunflower seeds
1 Cup Raisins (optional)
-divide batch into 2 greased loaf pans, bake both loaves at 350 for 55-60 minutes or until a toothpick comes out clean from the center of the loaf.
